The more expensive used the more expensive steels and that is a fact. You have to decide how you will be using your knives. If you are going to be performing light duty cooking for your family like light veggie cutting and Asian stir fry then quality stamped blades are just fine. If however you will be cutting lots of veggies and larger, heavy cuts of meats and need a longer term sharp edge on your knife then forged is the way to go.
